You have no recourse, no options. You were actually NOT hired. No real paper work representing you as their employee exists. You can file a claim with the National Labor Review Board, but I suspect that they cannot help you. After all, your complaint would be about a company that did not employ you. But you should give them a try anyway. However, I do suspect that you "hung yourself". Why would you ask them if you should "hand in my notice"? Even if they new that you were currently employed, they would ume that you had advised your company that you were shopping around for another job. That is what they would expect from one of their own employees. You said what they didn't want to hear. and that chaged everything. 'Too many sick days' was just an excuse. If not that,, they would have found another reason.
